Funnel Cake Fries

Ingredients
for 8 servings

STRAWBERRY DIPPING SAUCE

  • 2 cups strawberry, finely chopped
  • 1 cup sugar
  • 1 lemon juice
CARAMEL DIPPING SAUCE
  • 1 cup sugar
  • 4 tablespoons unsalted butter
  • ½ cup heavy cream
  • 1 pinch kosher salt
FUNNEL CAKE FRIES
  • 1 qt neutral oil, such as canola or vegetable, for frying
  • 3 cups all-purpose flour
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups milk
  • 3 eggs, beaten
MARSHMALLOW DIPPING SAUCE
  • 2 cups mini marshmallows
  • 2 tablespoons unsalted butter, at room temperature
CHOCOLATE DIPPING SAUCE
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil
  • 2 tablespoons powdered sugar, for serving
Preparation
  1. Make the strawberry dipping sauce: Add the strawberries, sugar, and lemon juice to a small pot over medium-high heat and bring to a boil. Reduce the heat to medium-low and simmer for 30 minutes, until thickened. Remove the pot from the heat and set aside until ready to serve.

  2. Make the caramel dipping sauce: Add the sugar to a small pan over medium heat. Without stirring, cook the caramel for about 10 minutes, swirling the pan occasionally to loosen any clumps of sugar. Once the sugar turns dark amber in color, remove the pot from the heat. Add the butter and heavy cream and whisk to combine. Be careful as the mixture will bubble up and could burn you. 3. Add the salt and stir to combine. Remove the pan from the heat and set aside until ready to serve.

  3. Make the fries: Heat 1 inch (2.5 cm) of oil in a deep pan over medium-high heat until it reaches 375°F (190°C).
  4. In a large bowl, mix together the flour, sugar, baking powder, and salt.

  5. Add the milk and eggs to the dry ingredients. With a rubber spatula, stir until fully incorporated.

  6. Transfer the batter to a clean squeeze bottle.

  7. Working one at a time, squeeze the batter into hot oil. Cook for 30-45 seconds on each side until golden brown. Remove from the oil with a slotted spoon and drain on a paper wire rack over a baking tray.

  8. Make the marshmallow dipping sauce: Add the marshmallows and butter to a microwave-safe bowl and microwave for 1 minute in 30-second intervals, stirring until smooth.

  9. Make the chocolate dipping sauce: Add the chocolate chips and coconut oil to a microwave-safe bowl and microwave in 30-second intervals, stirring between, until melted.

  10. Dust the funnel cake fries with powdered sugar and serve with the dipping sauces.

  11. Enjoy!
 
Oh my, boredom has surely set in but I feel somewhat vindicated now.
The lady of the house caught me watching the sewing channel the other day and she has delighted in telling all of my friends, her friends, our friends, and anyone else she happens to talk to.
But hey, there hasn't been much entertainment on MoSports lately and when Raw was banned I was convinced the Chinese had taken over MoSports. So, since I don't stream or netflix I can hardly be blamed for turning to the sewing channel.

Speaking of pudding, I'd like to change my vote, banana pudding might be the best dessert on the planet.

I googled it. St. Louis treat. My wife knew what it was but she makes Heart Attack Cake.
Over 50 years ago, my brothers and I would haul hay for the neighbors down the road - Chrissy and Margaret. Margaret was one on those that would bake dozens of cookies in the winter and when you hauled hay there you had to take a break in the afternoon, and she would bring out lemonade and oatmeal raisin cookies. The cookies were not quite thawed, but in late July they were incredible because of that. Amazing how you can still taste things from years ago.
