If life were fair ... and the site truly rotated?
MoSo should be included. Their facilities aren't great by any stretch but they would be adequate.
Joplin is right on the interstate and is also an epicenter for the rural corner of four states --- several hotels and a RIDICULOUS amount of restaurants for a town of its size.

The rotations could be really cool: For example,

Class 1 and 2 at William Jewell College in Liberty, MO
Class 3 and 4 at MIssouri State
Class 8 and, 5 and 6 at Columbia

Next year:

Class 1 and 2 at Missouri Southern
Class 3 and 4 at Warrensburg, Central Mo
Class 8, 5 and 6 at Missouri State.

I'm leaving out St. Louis and KC for the most part, but you get the drift.
 
I actually think Joplin would be a pretty good host for the event. There is a lot more there than most people would think based on it's population. Ample hotels and a ton of restaurants both chains and unique local flavor. It's not centrally located but at the crossroads of two major interestates it's relatively easy to reach for many areas. Plus, I think many locals would attend some of the games even if they didn't have a team involved. Even more so if you happened to throw in some WC, Lamar, Mt Vernon or Seneca or others in the general area that might make a run.

The stadium at MSSU is a mixed bag but it's far from terrible. The main part of the stadium exterior and entrance is fairly worn and dated with the brown gravel covered panels that were so popular in the 70s. I think the half baked attempts and updating it with the vinyl wraps look pretty cheap but oh well. Beyond that, the layout, capacity, functionality are all pretty good in my opinion.
 
It should rotate between Mizzou and MSU ....the other venues need not apply.
 
Children's Mercy Park in Kansas City would be cool, although technically it is in Kansas.

Make it a statewide party...rotate between 5-6 locations.

Saturday the 24th at U of Central Missouri:
8 man-2pm
Class 6-6pm

Friday the 30th at Missouri Southern (After renovation:)
Class 2-3pm
Class 4-7pm

Saturday December 1st at Missouri State:
Class 3-11am
Class 1-3pm
Class 5-7pm

Hell, the West wins 75-80% of all the titles...let's have them all over here as above:

But it would be great to have it Local. Missouri State wasn't bad imo so that would be my vote.
When they renovate, the fans are going to be as close as the track will allow.
